Roasted Cauliflower
1 head cauliflower, hard care discarded, cut into small florets
2 garlic cloves, finely chopped
extra virgin olive oil, enough for a light drizzle over each floret, about 2-3 tablespoons
pinch coarse salt
pinch freshly ground black pepper
1/2 lemon
Preheat oven to 450 degrees. In a baking dish large enough to hold the cauliflower in one layer, toss all the ingredients together except for the lemon. Roast for 35 minutes, stirring occasionally, until the cauliflower is caramelized all over. Before serving, squeeze the juice of the lemon over the top. Add extra salt and pepper as needed.
